Yeast Mixture

Instructions

Step 1: Activate the Yeast

In a small bowl, combine warm water, yeast, and 2 tablespoons of sugar. Stir gently and let sit for 15 minutes until foamy and fragrant.

Step 2: Mix the Dough

In a large bowl, whisk together flour, salt, and remaining sugar. Add the yeast mixture, egg, and egg yolk. Mix until a rough dough forms.

Step 3: Add Butter and Knead

Add softened butter and knead the dough on a floured surface for 8 to 10 minutes until smooth, elastic, and slightly tacky.

Step 4: First Rise

Place the dough in a lightly oiled bowl, cover, and let rise in a warm spot for 1 hour or until doubled in size.

Step 5: Shape the Buns

Punch down the dough and divide into 8 equal portions. Shape each into a smooth ball and place on a parchment-lined baking sheet.

Step 6: Second Rise

Cover loosely and let rise for 30 to 45 minutes until puffy.

Step 7: Bake

Brush tops with egg wash. Bake at 375°F for 15 to 18 minutes until golden brown.
